Before your first use, soak the prongs in warm water for about a minute to soften and protect them. Then:
- Sift 1–2 scoops (approx. 2g) of matcha into your bowl
- Add 2 ounces of hot, non-boiling water
- Whisk briskly in a zig-zag "W" or "M" motion — not circular — until a fine, even froth forms
- Lift the whisk gently and serve
A little care keeps your chasen lasting far longer:
- Rinse under warm water immediately after use — never use soap or detergent
- Gently swirl to release any matcha caught in the prongs
- Air-dry prong-side up, ideally on a whisk holder (kusenaoshi) to preserve its shape
- Avoid prolonged soaking, dishwashers, and direct heat
- Store somewhere dry and open — not in an airtight container
Each chasen is carved by hand from a single piece of bamboo. The 72 fine prongs make far more contact with the tea than a coarser whisk or spoon, breaking up clumps and whipping in air to create the smooth, creamy froth that defines a proper bowl of matcha. It's the one tool traditional preparation really can't do without.
