High-grade sencha is a premium Japanese green tea made from the first flush of young tea leaves. It offers a more refined taste, vibrant green colour, and higher nutritional value than lower-grade teas.

High-grade sencha is made from the first harvest and undergoes meticulous processing, which results in a richer, more complex flavour and a higher concentration of nutrients like catechins, vitamins, and amino acids.

Good quality sencha has a well-balanced flavour with a mix of umami, grassy notes, and a slight sweetness. It has a smooth finish, making it refreshing and less astringent than lower grades.

Sencha is packed with antioxidants, particularly catechins, which help combat free radicals, boost the immune system, improve metabolism, and support heart health. It’s also a good source of vitamins C and E.

Use 70-80°C (160-175°F) water and steep for about 60-90 seconds. Higher temperatures or longer steeping can make the tea more astringent, so precise brewing is key to bringing out the best flavour.

Store sencha in an airtight container away from light, heat, and moisture. Keeping it in a cool, dry place or even in the fridge (in a sealed bag) will help maintain its freshness and vibrant colour.

Sencha is made from whole tea leaves that are steeped, while matcha is made from ground tea leaves that are whisked into the water. Matcha typically has a more intense flavour and higher caffeine content.

Shorter brewing times (30-60 seconds) result in a more delicate, sweet flavour, while longer steeping (up to 2 minutes) brings out stronger, more astringent notes. The key is to find the balance that suits your taste.
